Cut<\/p>\n<p>off the base, two inches thick,<\/p>\n<p>discard the rest. Fill a crystal-<\/p>\n<p>clear bowl with water and drown<\/p>\n<p>it in the coolness. Wait<\/p>\n<p>a week and then you\u2019ll start<\/p>\n<p>to see the center rise<\/p>\n<p>like a volcano forming<\/p>\n<p>from rocks and mud. Day after<\/p>\n<p>day, it grows closer to the sky.<\/p>\n<p>A month goes by. Leaves soon<\/p>\n<p>appear, taking over the three<\/p>\n<p>skinny stalks tall as your hand,<\/p>\n<p>like fingernails left untrimmed,<\/p>\n<p>waving with each breath blowing<\/p>\n<p>through the house. The water will grow<\/p>\n<p>green with syrupy slime that attacks<\/p>\n<p>what\u2019s left of the base, rotting<\/p>\n<p>it away into brown sludge.<\/p>\n<p>I don\u2019t know how long it takes<\/p>\n<p>until it\u2019s ready to eat.<\/p>\n<p>All I know is how it grows,<\/p>\n<p>taller and taller each day<\/p>\n<p>until it covers the windowsill<\/p>\n<p>with shade, my own little tree.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The Way Celery Grows &nbsp; Rip apart the package and take out the full-grown stalk.
